Sandwich Cake (serves 8 - 12)
This easy recipe makes a classic sandwich cake in no time at all. Create a delicious light sponge that is an ideal base for a birthday cake, or just serve a slice with some butter and jam for afternoon tea.
Ingredients:
1 ¾ cups flour
2 eggs
125g butter
1 cup sugar
1 cup milk
3 tsp baking powder
pinch of salt
1 tsp vanilla essence
Method:
- Cream butter and sugar.
- Add eggs – one at a time.
- Add vanilla essence.
- Add sifted flour, salt and baking powder alternately with milk.
- Bake for 25 minutes at 190°C – in two round tins.
