Napoletana Pasta Sauce (serves 4)
The tomato and basil based classic Napoletana sauce goes with just about any type of pasta – be it spaghetti, ravioli or penne. Follow this easy recipe to make a delicious Napoletana Pasta, and spice it up by adding chillies and some crispy bacon.
Ingredients:
3 tbsp olive oil
1 onion, finely diced
750g ripe tomatoes, skinned and roughly chopped
ground black pepper and sea salt
25g unsalted butter, cubed
15-20 fresh basil leaves, torn
Method:
- In a heavy pan, heat oil and fry onion for five minutes.
- Add tomatoes, season with salt and pepper.
- Cover and simmer for 20 minutes.
- Add basil and butter.
- Mix well.
