Napoletana Pasta Sauce (serves 4)

The tomato and basil based classic Napoletana sauce goes with just about any type of pasta – be it spaghetti, ravioli or penne. Follow this easy recipe to make a delicious Napoletana Pasta, and spice it up by adding chillies and some crispy bacon.

Ingredients:

3 tbsp olive oil
1 onion, finely diced
750g ripe tomatoes, skinned and roughly chopped
ground black pepper and sea salt
25g unsalted butter, cubed
15-20 fresh basil leaves, torn

Method:
  1. In a heavy pan, heat oil and fry onion for five minutes.
  2. Add tomatoes, season with salt and pepper.
  3. Cover and simmer for 20 minutes.
  4. Add basil and butter.
  5. Mix well.
