Banana Fritters (serves 4)
Light, crispy and golden brown banana fritters are easy to make and very, very tasty. Follow this easy step-by-step recipe in order to achieve your perfect banana fritters – a typical South African dessert popular among both children and grown-ups.
Ingredients:
6 large, firm bananas
oil for deep-frying
1 cup plain flour
1 egg, separated
2 tbsp milk
2 tbsp water
½ cup castor sugar mixed with 2 tsp cinnamon powder
Method:
- Peel bananas and cut them in half (crosswise, not lengthwise).
- Dust with flour and shake off the excess.
- Add salt to the remaining flour.
- Add the egg yolk, water and milk to the flour and lightly beat with a fork.
- If the batter is too thick add a little more water.
- Beat the white of the egg until stiff, then fold into the mix.
- Dip the banana halves into the batter mix and ease (carefully!) into hot, deep oil.
- Fry until crisp and golden brown (it should take between two and three minutes).
- Place fried banana pieces on kitchen towel to remove excess oil.
- Sprinkle liberally with the castor sugar and serve immediately.
- Great with ice cream or a generous tot of your favourite liqueur.
